“Skate wing” is a bit vague, isn’t it?

Behind this name, different species may be involved. And they are not all in the same situation: some populations are doing well, while others require greater vigilance.

So how can you make the right choice if you do not know exactly what you are buying?

At Coq Marée, we support the initiative led by the Organisation des Pêcheurs Normands to improve the identification of skates and sharks, from catch to consumer.

Because a precise name means:

🔹 better traceability;
🔹 more informed consumption;
🔹 protection better tailored to each species.

In short, before we sit down to eat, let us introduce ourselves! 😉
