At Coq Marée, we are committed to mastering the entire process—from fishing to the plate, including packaging and marketing—while minimizing our carbon footprint. All our operations are carried out locally, reducing transportation and helping preserve the environment.
Our expertise is built on a unique synergy with Dieppe Atelier Naval (D.A.N.), specialists in the maintenance, repair, and manufacturing of fishing equipment. This partnership allows us to optimize each stage of production, ensuring impeccable quality while meeting the highest standards and our customers’ expectations.

Traceability, Freshness, and Quality.
French Coastal Fishery:
We practice sustainable, artisanal fishing in Normandy, with 24 to 48-hour trips to ensure optimal freshness of our scallops.
Sustainable Stock Management:
Our resource management is monitored by an independent organization, with strict quotas of 2 tons per trip per vessel. We also respect biological rest periods, halting fishing from May 15 to October 1 to promote reproduction, and creating annual fallow zones to renew stocks.
Sorting and Preservation Onboard:
Only scallops over 11 cm are kept after rigorous sorting on board. They are then stored in refrigerated holds to maintain freshness until they arrive at the workshop.
From Sea to Workshop: A sustainable Short Supply Chain
As soon as our scallops are landed, they are transported directly to our production workshop, located just steps from the unloading docks. Hand-shucked the same day, they are frozen within 48 hours to preserve their exceptional freshness and quality.
Quality and Certification:
Our scallops are frozen at -35°C for 30 minutes with a protective glaze to maintain their freshness. We offer scallops without roe from October to November and with roe from December to May, all Label Rouge certified, guaranteeing superior quality.
